Noodle Preparation

Prepare the Spinach

Blanch the spinach in boiling water for 1-2 minutes until wilted. Drain and rinse with cold water to stop cooking, then squeeze out excess moisture.

Make the Noodle Dough

In a mixing bowl, combine the blanched spinach, all-purpose flour, egg, and salt. Knead the mixture until a smooth dough forms. Wrap the dough in plastic wrap and let it rest for 30 minutes.

Roll and Cut the Noodles

After resting, roll out the dough to your desired thickness, then cut into thin strips to create noodles.

Prepare the Vegetables

Julienne the carrot and cucumber. Thinly slice the radishes. Set aside in a bowl.

Prepare the Eggs

Soft-boil the eggs by cooking them in boiling water for about 6-7 minutes. Remove from water, cool under cold water, peel, and cut in half.

Dressing Preparation

Mix the Dressing

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, Dijon mustard, sugar, and season with salt and pepper to taste.

Assemble the Dish

Place the cooked noodles in a bowl, top with the prepared vegetables, soft-boiled eggs, shredded nori, and your choice of protein. Drizzle the soy mustard sesame dressing over the top and serve cold.
