Method

Marinating the Chicken or Pork

Marinate the Chicken

In a bowl, combine soy sauce, gochujang, honey, minced garlic, grated ginger, and sesame oil. Add the boneless chicken thighs into the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Marinate the Pork (if using)

In a separate bowl, combine soy sauce, gochujang, honey, minced garlic, grated ginger, and sesame oil. Add the ground pork into the marinade, mixing thoroughly. Cover and refrigerate for at least 30 minutes.

Cook the Chicken

Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat. Remove the chicken from the marinade and add to the skillet. Cook for about 6-7 minutes on each side until the chicken is cooked through and has a nice char. Remove from the skillet and let it rest for a few minutes before slicing.

Cook the Pork (if using)

In the same skillet, add a bit more vegetable oil if needed. Add the marinated ground pork and cook, breaking it up with a spatula, until browned and fully cooked, about 5-8 minutes.

Warm the Tortillas

In a separate skillet or directly over the flame, warm the corn tortillas for about 30 seconds on each side until pliable.

Assemble the Tacos

Slice the cooked chicken or pork into bite-sized pieces. Place the meat on a warm tortilla, then top with sliced green onions, chopped cilantro, and a squeeze of lime juice. Optionally, serve with additional lime wedges on the side.
