Preparation
Clean the Mussels
Rinse the fresh mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.
Mince the Garlic and Chop the Parsley
Finely mince the garlic cloves and chop the fresh parsley. Set aside.
Prepare the Lemon
Cut the lemon in half and juice one half, while slicing the other half into wedges for garnish.
Cooking
Heat the Olive Oil
In a large skillet over medium heat, add the olive oil. Allow it to heat for about 2 minutes.
Pour in the White Wine
Carefully pour the white wine over the mussels, and season with salt and black pepper. Increase the heat to high.
Cover and Cook
Cover the skillet with a lid and allow the mussels to steam for about 5-7 minutes, or until they have opened up.
Finish with Lemon and Parsley
Once the mussels are open, squeeze the lemon juice over the mussels and sprinkle the chopped parsley on top. Stir gently.
