Sauté Base Ingredients

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

Add Vegetables

Stir in the diced carrots and celery. Cook for another 5 minutes, stirring occasionally. Add the minced garlic and cook for an additional 1 minute until fragrant.

Pour in Broth

Add the vegetable broth to the pot and bring the mixture to a boil over high heat.

Incorporate Seasonal Ingredients

Once boiling, add the diced zucchini, green beans, diced tomatoes, and fresh herbs to the pot. Reduce heat to low and let it simmer for 20 minutes.

Add Spinach and Seasoning

In the last 5 minutes of cooking, stir in the fresh spinach, salt, black pepper, and red pepper flakes. Allow the spinach to wilt.

Ladle the soup into bowls and garnish with extra fresh herbs if desired. Serve hot.
