Poach the Eggs

Bring a pot of water to a gentle simmer. Add a splash of vinegar. Crack each egg into a small bowl and gently slide them into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and place on a paper towel to drain.

Prepare the Hollandaise

In a double boiler, melt the butter. In a separate bowl, whisk the egg yolks with lemon juice, paprika, salt, and pepper until thick. Slowly drizzle in the melted butter while whisking continuously until thick and smooth. Adjust seasoning to taste.

Toast the Muffins and Prepare Ham

Split the English muffin in half and toast until golden brown. Heat the ham slices in a skillet until warmed through.

Assemble the Classic Benny

On each toasted muffin half, layer the warmed ham, followed by the poached egg. Generously drizzle with hollandaise sauce. Serve with your choice of hashbrowns or mixed greens on the side.
