Rosehip Wine Preparation

Make the Rosehip Wine

In a pot, combine dried rosehips and water. Bring to a boil, then reduce heat and simmer for 30 minutes. Strain the liquid into a clean container, discarding solids. Stir in sugar until dissolved, then add yeast. Allow to ferment for 1-2 weeks in a dark, cool place.

In a large mixing bowl, combine the fermented rosehip wine, mezcal, toasted cardamom pods, caraway seeds, and lime juice. Stir well to mix all flavors.

Lime Foam Preparation

Make the Lime Foam

In a clean bowl, whisk the egg whites until frothy. Gradually add sugar while continuing to whisk until soft peaks form. Gently fold in lime zest.

Serving

Serve the Punch

Pour the punch into glasses and top each serving with a dollop of lime foam. Garnish with a sprinkle of toasted cardamom or a lime wheel if desired.
