Crepes Preparation
Make the Crepe Batter
In a mixing bowl, combine the all-purpose flour, milk, eggs, and salt. Whisk until smooth and let it rest for 30 minutes.
Cook the Crepes
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges begin to lift, then flip and cook for another minute. Repeat with remaining batter to make two crepes.
Filling Preparation
Fry the Eggs
In the same skillet, add 1 tablespoon of butter. Crack the cage-free eggs into the skillet and cook to your desired doneness (sunny-side up or over-easy). Season with freshly cracked pepper.
Assemble the Crepes
On each crepe, layer 2 slices of black forest ham and sprinkle 1/2 cup of gruyere cheese. Place the fried egg on top and fold the crepe over. Serve hot.
