Method

Cooking the Pork Chops

Prepare the Pork Chops

Season the pork chops with olive oil, salt, black pepper, and garlic powder. Let them marinate for 15 minutes.

Cook the Pork Chops

Heat a skillet over medium-high heat. Add the pork chops and cook for 6-7 minutes on each side until they reach an internal temperature of 145°F (63°C). Remove from heat and let rest.

Buttermilk Mashed Potatoes

Boil the Potatoes

Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return to the pot. Add buttermilk, butter, salt, and pepper. Mash until smooth and creamy.

Steamed Broccolini

Steam the Broccolini

In a pot, bring water to a boil and place a steamer basket over it. Add broccolini and steam for 5-7 minutes until tender. Drizzle with olive oil and sprinkle with salt.

Brandy Peppercorn Sauce

Make the Sauce

In the same skillet used for the pork, add brandy and scrape the bottom to deglaze. Add heavy cream, beef broth, and black peppercorns. Simmer until thickened, about 5-7 minutes. Finish with butter.
