Cooking the Steak

Prepare the Sirloin

Season the AAA sirloin steak with salt and black pepper on both sides.

Cook the Sirloin

Heat a skillet over medium-high heat. Add a little olive oil and sear the steak for 4-5 minutes on each side for medium-rare, or until desired doneness.

Preparing Buttermilk Mashed Potatoes

Boil Potatoes

Peel and chop the russet potatoes. Boil them in salted water until tender, about 15 minutes. Drain well.

Mash Potatoes

In a bowl, combine the drained potatoes, buttermilk, butter, salt, and black pepper. Mash until smooth and creamy.

Steaming Broccolini

Steam the Broccolini

In a steamer or a pot with a steaming basket, steam the broccolini for about 5-7 minutes until bright green and tender. Drizzle with olive oil and sprinkle with salt before serving.

Making Brandy Peppercorn Sauce

Prepare the Sauce

In the same skillet used to cook the steak, add brandy and scrape up any browned bits. Reduce the brandy by half, then add beef broth and heavy cream. Stir in the crushed peppercorns and simmer until thickened. Finish with butter and salt.
