Beef Tartare Preparation

Prepare the Beef

Finely chop the AAA beef tenderloin by hand, ensuring it’s cut into small, uniform pieces.

Mix Ingredients

In a bowl, combine the chopped beef with egg yolk, capers, shallot, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix gently until well combined.

Roasted Bone Marrow Preparation

Prepare the Bone Marrow

Preheat the oven to 450°F (230°C). Place the bone marrow bones upright on a baking tray, season with salt and black pepper, and roast in the oven for about 15-20 minutes until the marrow is soft and slightly browned.

Arugula Salad Preparation

Make the Salad

In a bowl, toss the arugula with olive oil, lemon juice, salt, and black pepper until well coated.

Grilled Focaccia Preparation

Grill the Focaccia

Brush the focaccia loaf with olive oil and grill on medium heat for about 2-3 minutes on each side until crispy and golden.

Plating

Assemble the Dish

On a plate, form the beef tartare into a mound, serve with roasted bone marrow on the side, and add the arugula salad and grilled focaccia.
