Juice Preparation

Prepare Pineapple Juice

If using fresh pineapples, cut the pineapple into quarters. Remove the skin and core, and chop the flesh into smaller pieces. Blend the pineapple pieces in a blender until smooth. Strain the mixture through a fine mesh sieve or cheesecloth into a bowl to get pure pineapple juice. Measure out 1 cup of the juice for the mimosas.

Mix the Mimosa

In a champagne flute or a mimosa glass, pour 1 cup of pure pineapple juice. Slowly add 1 cup of Prosecco to the glass, pouring it over the juice to create a layered effect. Be careful to pour gently to minimize foam.

Garnishing

Add Garnish

If desired, garnish the mimosa with a fresh pineapple wedge on the rim of the glass and add a few mint leaves for an aromatic touch.
