Prepare the Passion Fruit Puree
If using whole passion fruits, cut them in half and scoop out the pulp into a blender. Blend until smooth, then strain through a fine mesh sieve to remove seeds, yielding about 1 cup of passion fruit puree.
Chill the Ingredients
Make sure your prosecco and orange juice are well-chilled before mixing to ensure a refreshing drink.
Assembling the Mimosa
Mix the Ingredients
In a large pitcher, combine the passion fruit puree and pure orange juice. Stir gently to mix.
Pour in the Prosecco
Slowly add the bottle of chilled prosecco to the pitcher, pouring gently to preserve the bubbles. Stir lightly to combine.
Serving
Garnish and Serve
Pour the mimosa into champagne flutes. Optionally, garnish with a half passion fruit placed on the rim of each glass and a mint leaf for aroma. Serve immediately and enjoy!
