Prepare the Catfish

Rinse the catfish fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.

Set Up Breading Stations

In three separate shallow dishes, prepare the breading stations: one with cornmeal, one with crushed potato chips, and one with a mixture of beaten eggs and milk.

Bread the Catfish

Dip each seasoned catfish fillet into the cornmeal, ensuring it’s fully coated. Next, dip it into the egg and milk mixture, allowing any excess to drip off. Finally, coat the fillet in crushed potato chips or shredded coconut, pressing gently to adhere.

Heat the Oil

In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it sizzles, the oil is ready.

Fry the Catfish

Carefully add the breaded catfish fillets to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and cooked through.

Drain and Serve

Once cooked, transfer the catfish to a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
