Cook the Potatoes

Wash and peel the potatoes. Cut them into quarters and place them in a large pot. Cover with water and add a pinch of salt. Bring to a boil over medium-high heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender. Drain and let cool.

Prepare the Vegetables

While the potatoes are cooling, chop the celery and red onion into small pieces. Set aside.

Peel the hard-boiled eggs and chop them into small pieces. Set aside.

Make the Dressing

In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, paprika, and sugar. Whisk together until smooth.

Combine Ingredients

Once the potatoes have cooled, cut them into bite-sized pieces. Add the potatoes, chopped celery, red onion, and chopped eggs to the bowl with the dressing. Gently fold the ingredients together until well coated with the dressing.
