Prepare the Prime Rib

Take the prime rib roast out of the refrigerator and let it sit at room temperature for about 1 hour before cooking. This helps it cook more evenly.

Season the Roast

In a small bowl, mix together the kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub this mixture all over the prime rib roast, ensuring it is evenly coated. Drizzle olive oil over the roast and rub it in.

Preheat the Oven

Preheat your oven to 450°F (230°C).

Roast the Prime Rib

Place the seasoned prime rib roast on a rack in a roasting pan. Roast in the preheated oven for 20 minutes to create a nice crust.

Reduce the Temperature

After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired level of doneness (125°F for rare, 135°F for medium rare, and 145°F for medium).

Rest the Roast

Once the roast reaches the desired temperature, remove it from the oven and cover it loosely with aluminum foil. Let it rest for at least 20-30 minutes. This allows the juices to redistribute throughout the meat.

Slice and Serve

After resting, slice the prime rib against the grain into thick slices. Serve with horseradish sauce and au jus, if desired.
