Prepare the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Add Vegetables and Cheese
Stir in the diced bell peppers, sliced green onions, and shredded cheddar cheese into the egg mixture.
Cook the Egg Mixture
Heat olive oil in a large skillet over medium heat. Pour in the egg mixture and cook, without stirring, until the edges begin to set (about 5 minutes).
Finish Cooking
Using a spatula, gently stir the mixture, cooking until the eggs are fully set (about 3-4 minutes). Remove from heat.
