Prepare the Chorizo

In a skillet over medium heat, add the house-made chorizo. Cook until browned and fully cooked, about 5-7 minutes. Stir occasionally.

Melt the Cheese

In a separate pan, heat the olive oil over medium heat. Add the Mexican white melting cheese and allow it to melt slowly. Stir frequently to ensure even melting.

Combine Chorizo and Cheese

Once the cheese is melted, fold in the cooked chorizo. If using jalapeño, add it at this stage for extra heat.

Garnish

Once combined, sprinkle the chopped cilantro on top.

Serve

Transfer the queso flameado to a serving dish and serve immediately with tortilla chips for dipping.
