Roasting the Chicken

Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat dry with paper towels. Rub the chicken with olive oil and season it generously with salt, black pepper, garlic powder, and paprika.

Assembling the Suizas

Once the chicken is roasted and rested, carve the chicken into pieces. Place the carved chicken in a baking dish.

Serving

Remove the dish from the oven. Drizzle the crema over the cheesy chicken, and garnish with chopped cebollita and crumbled queso fresco.
