Prepare the Feta

Preheat your oven to 375°F (190°C). Place feta cheese in a small baking dish, drizzle with olive oil, sprinkle oregano and black pepper on top, and roast for about 20 minutes or until golden.

Make the Goat Cheese Cake

In a bowl, combine goat cheese and salt. Shape into small patties. Dip each patty in flour, then beaten egg, and finally coat with panko breadcrumbs. In a skillet, heat vegetable oil over medium heat and fry the patties until golden brown on both sides, approximately 3-4 minutes per side.

Prepare the Salad

In a large bowl, add mixed greens, sliced cucumber, chopped Hau'ula tomatoes, and sliced onion. In a small bowl, whisk together white balsamic vinegar, honey, salt, and pepper. Drizzle the dressing over the salad and toss gently.
