Prepare the Mint Simple Syrup

In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium heat until the sugar is completely dissolved.

Infuse with Mint

Once the sugar has dissolved, add 1 cup of fresh mint leaves to the saucepan. Bring the mixture to a gentle simmer and let it simmer for about 5 minutes.

Cool and Strain

Remove the saucepan from heat and let the syrup cool to room temperature. Strain out the mint leaves using a fine mesh strainer or cheesecloth. Store the mint simple syrup in an airtight container in the refrigerator until ready to use.

Combine Ingredients

In a cocktail shaker, add 2 oz of white rum, 1 oz of mint simple syrup, and 1 oz of fresh lime juice.

Shake

Fill the shaker with ice and shake vigorously for about 15 seconds to chill the mixture.

Prepare the Glass

Fill a glass with ice cubes. Strain the cocktail mixture from the shaker into the glass over the ice.

Add Club Soda

Top the cocktail with 3 oz of club soda, gently stirring to combine.

Garnish and Serve

Garnish with 5 fresh mint leaves and a lime wedge. Serve immediately and enjoy your refreshing Cubano Mojito!
