Prepare the Strawberries

Wash the fresh strawberries thoroughly under cold water. Remove the stems and chop them into quarters.

Cook the Syrup

In a medium saucepan, combine the chopped strawberries, sugar, and water. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar has dissolved.

Simmer

Once boiling, reduce the heat to low and let the mixture simmer for about 10-15 minutes, or until the strawberries are soft and the syrup has thickened slightly.

Strain the Syrup

Remove the saucepan from heat. Using a fine mesh strainer, strain the syrup into a clean container, discarding the solids. Let the syrup cool completely before using.

Prepare the Glasses

Fill each glass with ice cubes to chill them.

Add Strawberry Syrup

Pour about 2 tablespoons of the cooled strawberry simple syrup into each glass over the ice.

Pour in Prosecco

Slowly pour the Prosecco into each glass, filling it to the top. Stir gently to combine the syrup and Prosecco.

Garnish and Serve

Garnish each drink with a fresh strawberry and a few mint leaves. Serve immediately and enjoy your Strawberry Sunset Spritz!
