Method
Preparation of the Base
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
Combine Wet Ingredients
In another bowl, beat the eggs and then mix in the milk and melted unsalted butter until smooth.
Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
Blueberry Topping
Prepare Blueberries
In a small saucepan over medium heat, combine the fresh blueberries, brown sugar, lemon juice, and cinnamon. Cook for about 5-7 minutes or until the blueberries begin to burst and the mixture thickens slightly.
Baking
Combine Base and Topping
Pour half of the batter into the prepared cake pan. Spoon half of the blueberry mixture on top, then pour the remaining batter over it. Top with the remaining blueberries.
Bake
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Serving
Cool and Garnish
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar and garnish with mint leaves before serving.
