Barley Porridge

Cook the Barley

In a saucepan, combine 1 cup of barley, 4 cups of water, and 1 tsp of salt. Bring to a boil.

Simmer

Reduce heat to low, cover, and let simmer for about 30-40 minutes or until the barley is tender and water is absorbed.

Add Olive Oil

Once cooked, stir in 1 tbsp of olive oil for added flavor.

Smoked Almond Salsa Verde

Prepare Ingredients

In a food processor, combine 1 cup of smoked almonds, 1 cup of fresh parsley, and 2 cloves of garlic.

Add Liquid Ingredients

Pour in 2 tbs of lemon juice and 1 tbs of olive oil.

Season

Add 1 tsp of salt and 1 tsp of black pepper.

Blend

Pulse until the mixture is well combined but still slightly chunky.

Grilled Lion's Mane

Prepare Mushrooms

Clean 2 cups of Lion's Mane mushrooms and slice them into thick pieces.

Season Mushrooms

In a bowl, drizzle with 2 tbs of olive oil, and season with 1 tsp of salt and 1 tsp of black pepper.

Grill Mushrooms

Preheat the grill to medium-high heat. Grill the mushrooms for about 5-7 minutes on each side until they are golden and tender.
