Prepare the Ribs
Start by seasoning the country ribs. In a bowl, mix together the salt, black pepper, and fennel seeds. Rub this mixture evenly over the ribs, ensuring they are well coated.
Marinade
In a separate bowl, combine the maple syrup and apple cider vinegar. Place the seasoned ribs in a large resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, preferably overnight for deeper flavor.
Prepare the Apples and Hazelnuts
While the ribs are marinating, preheat your oven to 350°F (175°C). Core and slice the apples into wedges. Roughly chop the hazelnuts and set aside.
Combine and Serve
Once the ribs are done smoking, remove them from the smoker and let them rest for 10 minutes. Serve the smoked ribs topped with the sautéed apples and hazelnuts.
