Prepare the Mushrooms

Clean the mixed mushrooms using a damp cloth or soft brush to remove any dirt. Cut larger mushrooms into bite-sized pieces, leaving smaller ones whole.

Sauté the Ingredients

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

Cook the Mushrooms

Add the prepared mushrooms to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and begin to brown.

Season the Mixture

Stir in the fresh thyme leaves, red pepper flakes, salt, and black pepper. Cook for another 2-3 minutes to allow the flavors to meld.

Add Vinegar

Pour in the white wine vinegar and cook for an additional 2-3 minutes until the liquid reduces slightly and the mushrooms are well coated.

Cool and Store

Remove the skillet from heat and let the mushroom conservas cool to room temperature. Transfer to a sterilized jar and store in the refrigerator.

Serve with Goat Cheese

Before serving, top the mushroom conservas with crumbled goat cheese. Serve with crusty bread or crackers for a delightful appetizer.
