Prepare the Meat

In a large pot, combine the pork shoulder and duck legs. Add salt, black pepper, thyme, crushed garlic, and bay leaves. Cover with water.

Cook the Meat

Bring to a boil over medium-high heat. Reduce heat to low and simmer for about 2 hours, or until the meat is very tender.

Shred the Meat

Remove the meat from the pot, reserving the cooking liquid. Shred the pork and duck using two forks and discard any bones and skin.

Combine with Fat

Return the shredded meat to the pot and add the duck fat or pork lard. Stir well to combine and cook on low heat for 10-15 minutes, adding some of the reserved cooking liquid for moisture.

Prepare the Fruit

Wash and chop the fresh seasonal fruit into small pieces.

Cook the Jam

In a saucepan, combine the chopped fruit, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens and reaches a jam-like consistency, about 20-25 minutes.

Cool and Store

Remove from heat and let the jam cool. Store in sterilized jars and refrigerate until ready to serve.
