Waffle Preparation
Mix Dry Ingredients
In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, and sugar until well combined.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
Preheat Waffle Iron
Preheat your waffle iron according to the manufacturer's instructions.
Cook the Waffles
Once the waffle iron is hot, pour enough batter to cover the surface (amount will depend on your waffle iron). Close the lid and cook until the waffles are golden brown and crisp, about 3-5 minutes.
Repeat
Remove the cooked waffles and keep them warm in a low oven while you repeat with the remaining batter.
Whipped Cream Preparation
Whip the Cream
In a chilled mixing bowl, whip the heavy cream (or coconut cream) with an electric mixer until soft peaks form.
Add Vanilla
Add the vanilla extract and continue to whip until stiff peaks form.
Assembly
Serve the Waffles
Place the warm waffles on plates. Top each waffle with a handful of mixed berries and a sprinkle of white chocolate chips.
Add Whipped Cream
Dollop the whipped cream over the berries on each waffle.
Finish with Toppings
Dust with powdered sugar and drizzle with maple syrup to taste.
