Prepare the Asparagus

Wash the jumbo asparagus under cold water. Trim the tough ends off the asparagus by snapping them off where they naturally break. This ensures that you have tender asparagus.

Season the Salmon

Pat the salmon fillets dry with paper towels. In a small bowl, mix the Cajun seasoning, salt, and black pepper. Rub this mixture evenly over the salmon fillets on all sides.

Cook the Asparagus

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the prepared asparagus to the skillet and sauté for about 5-7 minutes, stirring occasionally, until they are bright green and tender-crisp. Add minced garlic during the last minute of cooking for extra flavor. Remove the asparagus from the skillet and set aside.

Cook the Salmon

In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Once the oil is hot, place the seasoned salmon fillets skin-side down in the skillet. Cook for about 4-5 minutes on the first side until blackened and crispy. Flip the salmon and cook for an additional 3-4 minutes on the other side until cooked through and flaky.

Serve the Dish

Arrange the sautéed asparagus on a serving plate. Place the blackened salmon fillet on top of the asparagus. Squeeze fresh lemon juice over the dish for added flavor. Serve immediately.
