Prepare the Steak

Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes.

Season the Steak

Rub the olive oil all over the filet mignon, then season generously with salt, black pepper, and fresh rosemary.

Cook the Steak

Heat a skillet over medium-high heat. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare. Adjust cooking time to your preferred doneness.

Rest the Steak

Remove the steak from the skillet and let it rest for 5-10 minutes before serving.

Prepare the Potatoes

Peel the Yukon Gold potatoes and cut them into quarters.

Boil the Potatoes

Place the potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add the unsalted butter, heavy cream, salt, and black pepper. Mash until creamy and smooth.

Trim the tough ends of the fresh asparagus.

In a large skillet, heat the olive oil over medium heat. Add the asparagus and season with salt and black pepper. Sauté for about 5-7 minutes until tender-crisp.
