Prepare the Bread
Cut the day-old bread into cubes and place them in a large mixing bowl.
Mix Wet Ingredients
In a separate bowl, whisk together the whole milk, heavy cream, granulated sugar, vanilla extract, eggs, salt, and ground cinnamon until well combined.
Combine Mixtures
Pour the wet mixture over the cubed bread. Gently fold the bread into the liquid until all the bread is soaked. If desired, add raisins at this stage.
Soak the Bread
Let the mixture sit for at least 30 minutes, or cover and refrigerate for up to 12 hours to allow the bread to fully absorb the liquid.
Preheat the Oven
Preheat your oven to 350°F (175°C).
Bake the Pudding
Transfer the bread mixture into a greased baking dish, spreading it out evenly. Bake for 45-50 minutes or until the top is golden brown and the pudding is set.
Cool Down
Once baked, remove from the oven and let it cool for 10-15 minutes before serving.
Serving
Serve the Dish
Spoon the warm bread pudding into bowls and top each serving with a scoop of vanilla bean ice cream.
