Salad Preparation

Prepare the Lettuce

Remove any wilted leaves from the outside of the iceberg lettuce. Cut the lettuce into quarters, creating wedge shapes. Rinse each wedge under cold water and pat dry with paper towels.

Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove the bacon from the skillet and place on paper towels to drain excess grease. Once cooled, crumble the bacon into small pieces.

Prepare the Vegetables

Halve the cherry tomatoes and finely chop the red onion. Set aside. Chop the chives into small pieces for garnishing.

Make the Dressing

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper. Adjust seasoning to taste.

Assemble the Salad

On a large serving plate, place the iceberg wedges. Drizzle the dressing over each wedge generously. Top with cherry tomatoes, crumbled bacon, blue cheese, and red onion.
