Cook the Sausage

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the Italian sausage, breaking it apart with a spatula, and cook until browned and fully cooked, about 5-7 minutes. Season with salt, black pepper, and red pepper flakes to taste.

Prepare the Braised Greens

Once the sausage is cooked, add the braised greens to the skillet. Stir well to combine and cook for an additional 3-4 minutes until the greens are tender. Remove from heat and let cool slightly.

Mix the Ricotta Verde

In a bowl, combine the ricotta cheese, chopped parsley, and a pinch of salt and pepper. Mix until well combined.

Assemble the Lasagna

Preheat your oven to 180°C (350°F). In a baking dish, spread a thin layer of the sausage and greens mixture on the bottom. Layer 3 lasagna noodles over the mixture, then spread half of the ricotta verde over the noodles. Top with half of the Fontina cheese. Repeat the layers (sausage mixture, noodles, ricotta, and Fontina) until all ingredients are used, finishing with a layer of noodles topped with the remaining Fontina cheese and grated Parmesan.

Bake the Lasagna

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.

Let the lasagna cool for about 10 minutes before slicing. Serve warm and enjoy your crispy lasagna!
