Prepare the Shallot Rings

Slice the shallots into rings and soak them in cold water for about 10 minutes to reduce bitterness. Drain and pat dry.

Sear the Wagyu

Preheat a cast-iron skillet over high heat. Season the Wagyu beef with salt and black pepper. Add 1 tablespoon of olive oil to the skillet and sear the beef for 2-3 minutes on each side for medium-rare. Remove from heat and let it rest.

Grill the Chicory

Cut the chicory head in half lengthwise. Brush the cut sides with olive oil and season with salt and pepper. Place on the grill or under a broiler for about 5 minutes, until charred and tender.

Fry the Shallot Rings

In a small pan, heat the remaining tablespoon of olive oil over medium heat. Add the soaked shallot rings and fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Prepare the Umami Sauce

In a small bowl, mix together the soy sauce and mirin. Drizzle this mixture over the rested Wagyu beef before serving.

Plate the Dish

Slice the Wagyu beef and arrange it on a plate with grilled chicory and crispy shallot rings. Garnish with fresh herbs and serve immediately.
