Marinate the Chicken

In a bowl, combine the chicken thighs, jerk seasoning, lime juice, salt, and black pepper. Mix well to coat the chicken evenly. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Prepare the Vegetables

Slice the bell peppers and onion into thin strips. Mince the garlic cloves and grate the fresh ginger.

Sauté the Aromatics

In a large skillet, heat 1 tablespoon of oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

Cook the Chicken

Add the marinated chicken thighs to the skillet. Cook for about 5-7 minutes on each side until the chicken is browned and cooked through.

Add Vegetables and Coconut Milk

Once the chicken is cooked, add the sliced bell peppers and onion to the skillet. Pour in the coconut milk and stir well. Bring to a simmer and cook for another 10 minutes, allowing the flavors to meld together.
