Prepare Chicken Marinade

In a bowl, mix olive oil, minced garlic, lemon juice, dried oregano, salt, and black pepper. This will be the marinade for the chicken.

Place the chicken breasts in the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, allowing flavors to meld.

Cook Chicken

Preheat a grill or skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side until fully cooked and juices run clear.

Cook Quinoa

Rinse the quinoa under cold water. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes or until liquid is absorbed.
