Preparation Steps

1

Roast the Chiles

Preheat your oven to 450°F (230°C). Place the green chiles on a baking sheet and roast them for about 10-15 minutes, turning occasionally, until the skin is blistered and charred.

2

Peel and Chop

Once roasted, remove the chiles from the oven and place them in a sealed plastic bag for about 10 minutes to steam. This will help loosen the skins. Peel off the skins, remove the stems and seeds, and chop the chiles coarsely.

3

Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic cloves, sautéing until the onion becomes translucent.

4

Combine Ingredients

Add the chopped green chiles, vegetable broth, ground cumin, salt, and black pepper to the pot. Bring to a simmer.

5

Simmer

Reduce the heat to low and let the mixture simmer for about 20-25 minutes, allowing the flavors to meld together.

6

Finish

Stir in the lime juice and adjust the seasoning with additional salt and pepper if needed. Serve hot.
