Prepare the Bacon

Remove the bacon from its packaging and pat it dry with paper towels. If desired, cut the bacon strips in half for easier handling.

In a small bowl, combine the black pepper, brown sugar, salt, garlic powder, onion powder, and cayenne pepper. Mix well.

Sprinkle the dry rub evenly over the bacon strips, ensuring they are thoroughly coated. Let the bacon sit at room temperature for about 30 minutes to absorb the flavors.

Soak the pecan wood chips in water for at least 30 minutes. Preheat your smoker according to the manufacturer's instructions to a temperature of 200°F (93°C).
