In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are soft.

Stir in the minced garlic and cumin powder. Cook for another minute until fragrant.

Combine Lentils and Broth

Add the red lentils, vegetable broth, and tomato paste to the pot. Stir well to combine.

Simmer the Soup

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the lentils are tender.

Blend the Soup (Optional)

For a smoother texture, use an immersion blender to puree the soup to your desired consistency.

Season and Serve

Stir in the lemon juice and season with salt and black pepper to taste. Serve hot, garnished with chopped parsley.
