Cook Lentils

In a pot, combine the red lentils with 4 cups of water. Bring to a boil, then reduce heat and simmer until the lentils are tender, about 15-20 minutes.

Prepare Bulgur

Once the lentils are cooked, add the fine bulgur and 2 cups of boiling water to the pot. Stir and let it sit covered for about 15 minutes until the bulgur absorbs the water.

Mix Vegetables

Finely chop the spring onions, garlic, parsley, and mint. In a skillet, heat olive oil over medium heat, add the chopped spring onions and garlic, and sauté until fragrant.

Combine Ingredients

In a large bowl, combine the cooked lentil and bulgur mixture with the sautéed vegetables, red pepper paste, salt, and black pepper. Mix well until everything is fully incorporated.

Shape Balls

With wet hands, take small portions of the mixture and shape them into balls or patties.

Chill and Serve

Place the shaped köfte on a serving platter and refrigerate for at least 30 minutes before serving to allow them to firm up.
