Prepare the Vegetables

Preheat the oven to 400°F (200°C). Chop all the vegetables into bite-sized pieces, and place them in a large mixing bowl.

Season the Vegetables

Add olive oil, salt, black pepper, paprika, and cumin to the vegetables. Toss well to ensure the vegetables are evenly coated with the seasoning.

Roast the Vegetables

Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes or until they are golden and tender.

Cook the Rice

While the vegetables are roasting, rinse the rice under cold water. In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the rice, cover, and reduce the heat to low. Cook for about 15-20 minutes until the rice is tender and the liquid is absorbed.

Combine and Serve

Once the vegetables are done roasting, combine them with the cooked rice in a large pot. Mix gently to combine all ingredients. If desired, serve with a side of cacik and sourdough bread.
