Preparation of Greens

Wash and Cut Collard Greens

Thoroughly wash the collard greens under running water to remove any dirt or grit. Remove the tough stems and chop the leaves into bite-sized pieces.

Sautéing and Braising

Sauté Onion and Garlic

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Collard Greens

Add the chopped collard greens to the pot. Stir well to coat the greens with the oil and sauté for another 3-4 minutes until they start to wilt.

Add Seasoning and Broth

Pour in the vegetable broth, apple cider vinegar, salt, black pepper, and red pepper flakes. Stir to combine all the ingredients.

Braise the Greens

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the collard greens braise for 30-40 minutes, stirring occasionally, until they are tender and flavorful.

If desired, serve the braised collard greens topped with crumbled bacon and lemon wedges on the side for added flavor.
