Prepare the Meatloaf Mixture

In a large mixing bowl, combine the ground beef, bread crumbs, chopped onion, egg, milk, Worcestershire sauce, garlic powder, salt, and black pepper. Mix until well combined.

Shape the Meatloaf

Transfer the mixture into a loaf pan, shaping it into a loaf. Press down gently to remove any air pockets.

Bake the Meatloaf

Preheat the oven to 350°F (175°C). Bake the meatloaf for 1 hour, or until the internal temperature reaches 160°F (70°C).

Add Cheese

In the last 5 minutes of baking, sprinkle the shredded Irish cheddar cheese on top and allow it to melt.

Mushroom Gravy

Sauté the Mushrooms

In a skillet, melt the butter over medium heat. Add the sliced mushrooms and cook until they are golden brown, about 5-7 minutes.

Add Garlic

Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Make the Gravy

Sprinkle the flour over the mushroom mixture and stir to combine. Gradually add the beef broth, stirring continuously until the gravy thickens. Add soy sauce, salt, and black pepper to taste.

Mashed Potatoes

Boil the Potatoes

Place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Vegetables

Cook the Vegetables

In a separate pot, bring water to a boil and add the mixed vegetables. Cook for 5-7 minutes until tender. Drain and return to the pot.

Season the Vegetables

Add butter, salt, and black pepper to the vegetables, stirring until the butter is melted and everything is well-coated.
