Stir in rosemary, salt, and pepper. Reduce heat to low, cover, and let the ragu simmer for 30-40 minutes, stirring occasionally.

Cook the Spaghetti

While the ragu simmers, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

Fry the Eggs

In a separate pan, heat a bit of olive oil over medium heat. Crack the eggs into the pan and fry until the whites are set but the yolks are still runny, about 2-3 minutes.

Combine and Serve

Toss the cooked spaghetti with the meat ragu. Divide into bowls, top each serving with a fried egg, grated parmesan, and fresh herbs. Serve immediately.
