Method

Prepare the Salted Cod Cakes

1

Soak the Cod

Rinse the salted cod under cold water and soak it in water for 24 hours, changing the water several times.

2

Cook the Potatoes

Boil the diced potatoes in salted water until tender. Drain and let cool slightly.

3

Mix the Ingredients

In a bowl, flake the soaked cod and combine it with the cooled potatoes, lemon zest, parsley, beaten egg, flour, salt, and pepper. Mix until well combined.

4

Form the Cakes

Shape the mixture into patties or cakes, about 2 inches in diameter.

5

Fry the Cakes

Heat olive oil in a skillet over medium heat. Fry the cakes for about 3-4 minutes on each side until golden brown. Drain on paper towels.

Prepare the Puttanesca Sauce

6

Cook the Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

7

Add Tomatoes and Other Ingredients

Add crushed tomatoes, black olives, capers, and red pepper flakes. Simmer for about 15 minutes until the sauce thickens.

8

Finish the Sauce

Stir in fresh basil just before serving. Adjust seasoning with salt and pepper if needed.
