Prepare Biscuit Dough
Preheat the oven to 425°F (220°C). In a mixing bowl, whisk together the flour, baking powder, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.
Add Milk
Gradually add the milk to the dry ingredients, stirring until just combined. Do not overmix.
Shape and Bake Biscuits
Turn the dough out onto a floured surface and pat it to about 1-inch thick. Cut out biscuits using a round cutter and place them on a baking sheet. Bake for 12-15 minutes or until golden brown.

Cook Sausage
In a skillet over medium heat, cook the ground breakfast sausage until browned and cooked through, breaking it up into small pieces as it cooks.
Make Roux
Sprinkle the flour over the cooked sausage and stir well to combine. Cook for 1-2 minutes, stirring constantly.
Add Milk
Gradually whisk in the milk, continuing to stir until the gravy thickens. Season with black pepper and salt to taste.
Topping Directions
Blister Tomatoes
In a small pan, heat olive oil over medium-high heat. Add the cherry tomatoes and cook until they blister and burst, about 5 minutes. Set aside.
Prepare Scallions
Chop the scallions finely and set aside for garnish.
Cook Eggs (Optional)
If adding eggs, fry or scramble them to your liking and set aside.
Assembly Directions
Plate the Dish
To serve, place a warm biscuit on a plate, generously spoon the sausage gravy over the biscuit, and top with blistered tomatoes and scallions. Add cooked eggs on the side if desired.
