Prepare the Ingredients

In a bowl, beat the eggs with salt and black pepper until well combined.

Cook the Omelette

In a non-stick skillet, melt the butter over medium heat. Pour in the beaten eggs and let them cook undisturbed for about 2 minutes until the edges start to set.

Add Fillings

Sprinkle the diced ham and shredded cheddar cheese evenly over half of the omelette. Allow to cook for another 2-3 minutes until the cheese melts.

Fold and Serve

Carefully fold the omelette in half, slide onto a plate, and keep warm while you prepare the other components.

Preheat the Skillet

In a separate skillet, heat the olive oil over medium-high heat.

Cook the Tomatoes

Add the cherry tomatoes and minced garlic to the skillet. Season with salt and pepper. Cook for about 5-7 minutes until the tomatoes blister and start to burst.

Fried Smashed Potatoes

Boil the Potatoes

In a pot, boil the small potatoes until fork-tender, about 15 minutes. Drain and let cool slightly.

Smash and Fry

Using the bottom of a glass, gently smash each potato. In a skillet, heat olive oil over medium heat and fry the smashed potatoes until golden brown and crispy on both sides, about 4-5 minutes per side.

Season with salt and black pepper to taste before serving.

Assemble and Serve

On a plate, serve the omelette alongside the blistered tomatoes, fried smashed potatoes, diced avocado, and a generous portion of mixed fresh fruit.
