Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed. Remove from heat and let sit for 5 minutes before fluffing with a fork.

Sauté Spinach

In a large skillet, heat olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper to taste.

In the same skillet, crack the eggs and scramble them until fully cooked. Season with salt and pepper.

Combine Ingredients

In a large bowl, combine the cooked quinoa, sautéed spinach, scrambled eggs, and Gruyère cheese. Mix well.

Warm the tortillas in a separate skillet or microwave for a few seconds. Spoon the quinoa mixture into each tortilla, top with sliced avocado and a generous dollop of Romesco sauce.
