Preparation

1

Prepare the Arroyuelo

Select 6 pieces of fresh arroyuelo tree branches. Make sure they are young and tender for the best flavor. Rinse them under cold water to remove any dirt.

2

Chop the Garlic and Parsley

Finely chop 4 garlic cloves and 1 cup of fresh parsley. Set aside.

3

Mix the Marinade

In a small bowl, combine 3 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of salt, and 1 teaspoon of black pepper. Add chili flakes if you like it spicy.

Cooking

4

Marinate the Arroyuelo

Place the rinsed arroyuelo branches in a large mixing bowl. Pour the marinade over the branches and ensure they are evenly coated. Let them marinate for at least 30 minutes.

5

Grill the Arroyuelo

Preheat your grill to medium-high heat. Once hot, place the marinated arroyuelo branches on the grill. Cook for about 5-7 minutes on each side, or until they have nice grill marks and are tender.

6

Garnish and Serve

Remove the grilled arroyuelo from the grill and let them rest for a couple of minutes. Sprinkle chopped parsley on top and add grated Parmesan cheese if desired. Serve warm.
