Prepare the Plantains

Peel the green plantains using a sharp knife. Cut them into thin slices, approximately 1/8 inch thick.

Heat the Oil

In a large frying pan, pour in vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C).

Fry the Chips

Carefully add the sliced plantains to the hot oil in batches. Fry until they are golden and crispy, about 3-4 minutes per batch.

Season the Chips

Once fried, transfer the chips to a paper towel-lined plate to drain excess oil. Sprinkle immediately with salt and paprika while still hot.

Prepare the Aubergine

Wash the aubergine and cut it into cubes. Place the cubes in a colander, sprinkle with salt, and let them sit for about 20 minutes to draw out moisture.

Sauté the Onions and Garlic

In a skillet, heat olive oil over medium heat. Add thinly sliced onions and minced garlic, and sauté until the onions are translucent, about 5-7 minutes.

Add Aubergine and Seasonings

Add the drained aubergine cubes to the skillet. Stir in lemon juice, ground black pepper, and vegetable broth. Bring to a simmer.

Cook the Aubergine

Cover and cook for about 15-20 minutes, stirring occasionally, until the aubergine is tender and the sauce has thickened.
