In a bowl, combine chicken thighs with curry powder, paprika, salt, and black pepper. Mix well and let marinate for at least 30 minutes.

Finely chop the onion, garlic, tomatoes, green bell pepper, and ginger. Set aside.

In a large skillet, heat oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).

Stir in the chopped garlic and ginger, cooking for an additional 2 minutes until fragrant.
